If you're making a sandwich for yourself, you'll need two hard-boiled eggs.
Crack them, peel the shells off and discard. Then cut up your egg into small pieces, yolk and all!
Add salt and pepper, avocado chunks, then that awesome horseradish mustard!

Best Egg Salad Sandwich {Gluten-Free}
Ingredients
- 2 hardboiled eggs chopped
- 1 avocado chopped (you can use the whole avocado or half)
- 1 tablespoon horseradish mustard or more, if preferred
- baby kale leaves
- kosher salt to taste
- ground black peppercorn to taste
- gluten-free bread or crackers Udi's or Crunchmaster are gluten-free
Instructions
- In a bowl, combine chopped eggs, avocado, kosher salt and pepper then gently mix thoroughly with a spoon.
- On gluten free bread or crackers, spread horseradish mustard, top with baby kale, then top with egg mixture.
- You can serve these as appetizers on crackers or make a sandwich with them.
- You can add the horseradish to the egg mixture then stir, if preferred.
