Some cute gluten-free mini monster cookies for Halloween. This is a recipe I'm bringing back to the blog. These are very tasty. And hilarious to look at!
These are coated in dark and bittersweet chocolate. You can make a ton of these if you've got enough eyeball candies.
One of the things I love about these cookies is how easy they are to make. And they're very easy to eat! No utensils required.
Like little trick-or-treat chocolates, bumped up a notch.
These are bite sized and the inside is a sugar cookie. Which is then coated in thick, decadent chocolate and topped with fantastic googly eyes.
The googly eyes are gluten-free and you can order them in bulk from Amazon. Or you can make your own! This googly eye recipe comes from Cara at Fork & Beans blog, and they are adorable. Not only do they use gluten-free ingredients, but they are vegan too.
You will be using frozen cookie dough for this recipe. Just plop them on parchment paper and bake away. Once finished, let them cool. Once cooled, you can temper your chocolate.
Temper over the stove top, you ask?
Heck NO! In the microwave.
Ina Garten's fool proof temper method is genius and way too easy. I learned it from her awhile back watching one of her Barefoot Contessa episodes. No mess melting chocolate in a pot.
Just heat your morsels (leaving out a small portion) in a microwave safe glass mixing bowl for 30 seconds at a time. You mix after each 30 second round.
Microwaving is done when the chocolate is almost melted, and just a few little clumps remain. Toss back in the small portion you kept out, then stir it all together. The idea is that through tempering, your chocolate will yield a shiny look and have a melt in your mouth taste. No cracking. Brilliant.

Gluten-Free Mini Monster Cookies
Ingredients
- ½ cup unsalted butter or 1 stick softened
- 1 cup sugar
- 1 egg
- 1 tbsp milk
- 1 ½ tsp vanilla
- ¼ tsp kosher salt
- 2 cups gluten-free all purpose flour
- 1 cup semi-sweet chocolate morsels Enjoy Life & Endangered Species are gluten-free
- 1 cup dark chocolate chunks Enjoy Life & Endangered Species are gluten-free
- package of googly eyes Festival is labeled gluten-free or homemade
Instructions
- In a mixer, beat butter and sugar until creamed, then add egg and mix.
- Add milk vanilla and salt while mixing. Mix thoroughly.
- Slowly add flour and mix on low speed until blended.
- Scrape dough onto parchment paper and form a log shape with dough, then roll up dough in paper and twist ends shut.
- Freeze for at least a half an hour, or until frozen.
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Remove frozen dough log and unwrap. Cut the log in half, then roll up the other end and place back in freezer.
- Cut small pieces, about the size of an oversized teaspoon, and place on parchment paper. Each piece will not look the same. No flattening, shaping, nothing. Just cut and plop!
- This makes a TON of monster cookies!
- Fill up cookie sheet so that dough is not touching, then place in oven.
- Bake for approximately 8 minutes, or until tops become slightly golden. These are smaller pieces so you will be baking them less time you would a batch of regular cookies.
- When finished, take out cookie sheet from oven. You can slightly flatten tops but be careful not to crumble.
- Place mini cookie pieces on a separate plate or counter to cool.
- Once cookie pieces are cool, begin tempering chocolate.
- In a microwave safe glass mixing bowl, pour in all of the chocolate, except for a small handful portion. Set this aside.
- Place bowl in microwave for 30 seconds, then stir.
- Place back in microwave for 30 more seconds, then stir.
- You will be repeating this process about 2 more times, depending on your microwave strength.
- You will know you are done when the chocolate has small clumps in it after you stir. Do NOT microwave any longer then, as those clumps will melt into the heated chocolate! Place the set aside morsels in the bowl, then stir until smooth.
- Working fast with a spoon or your clean fingers, place mini cookie pieces into the bowl of melted chocolate and coat thoroughly.
- Let chocolate drizzle off each piece for a few seconds, then place chocolate pieces onto a clean sheet of parchment paper.
- Once you have coated all pieces, place 2 googly eyes on top of each piece carefully. Push in slightly. If you have remaining chocolate, you can reheat this to use for more cookies right away.
- Let monsters cool and harden completely, then serve on a platter for adults and kids to enjoy for Halloween festivities!
