This is the best gluten-free pizza recipe you'll ever try. I promise! It's easy, so so yummy, and can be whipped up on pizza night during any party!
The key to making gluten-free pizzas lies in the crust. So, f you want to have pizza night and need a spot for the gluten-free pizzas, then make your crust ahead of time. You can even freeze the gluten-free pizza dough balls in Ziploc baggies. Then just thaw them when it's time to bake! Now, in this recipe, I used Mission's Soft Taco Tortillas and they worked perfectly.
But make sure you pop the tortillas on a hot skillet for a couple minutes, to cook each side. After that, then you can assemble your pizza.
Things To Remember When Making a Gluten-Free Pizza Recipe:
- Flavor is KEY to your ingredients, so add rich flavors like sun dried tomatoes and red onions.
- ALWAYS season with salt and pepper! Gluten-free pizzas are more bland, so you need to season them.
- Thin crust is best for gluten-free pizzas. The flavors come from the toppings, not the dough.
I LOVE me some pizza with veggies in it. And in the Springtime, there is nothing like a pesto pizza smothered with arugula and sun dried tomatoes!
Ok, so a funny story about pizza: When I first met my husband I knew that I would probably end up marrying him on our second date. No joke. We went to a local pizza joint for dinner. Over talking and wine, the server laid out our pizza as we kept gabbing. Let me rephrase that...as I kept gabbing.
I was telling some story I don't even remember. This was way back before marriage and Celiac diagnosis and all the works. Anyhow, as I looked down to pause from yapping, I noticed Rich was already cutting a piece of pizza for me and putting it on a plate. He then set the plate in front of me. I was in SHOCK!
No man had ever done this before. Ever. I knew I had something special.
Now he steals gluten-free pizza slices from me every chance he gets. Especially these gluten-free pizza slices pictured here. Because they're so darn good.

GLUTEN-FREE PIZZA RECIPE WITH PESTO
Ingredients
- 1 gluten-free soft taco tortilla I used Mission Gluten-Free in this recipe
- gluten-free pesto sauce Follow my Recipe Below, OR Classico is labeled gluten-free
- fresh mozzarella Casaro is labeled gluten-free
- sundried tomatoes chopped, Follow my Recipe Below, OR
- red onion slices thinly sliced
- shredded chicken optional
- kosher salt and ground black peppercorn to taste
- Parmigiano-Reggiano shavings to top
- fresh basil leaves to top
- fresh arugula handful
Instructions
- Preheat oven to 400 degrees with a pizza stone in oven.
- On a heated skillet, place tortilla and cook on each side for about 1-2 minutes.
- The tortilla will bubble and brown. The goal here is to create a crust for the pizza.
- Remove tortilla from skillet, let cool for one minute, then immediately add toppings.
- For pesto sauce, combine 2 cups packed fresh basil leaves, 3-4 garlic cloves, ¾ cup grated Parmigiano-Reggiano, 3 tablespoons chopped walnuts, and a dash of salt and pepper in a mini food processor. Then slowly add ¼ to ½ cup olive oil to the food processor until mixed well. You can process to form a paste or process less for more texture. If buying store-bought, Classico brand is gluten-free.)
- Smooth a generous layer of pesto sauce all over gluten-free tortilla.
- Add slices of fresh mozzarella circles all over.
- Sprinkle cooked, shredded chicken all over, if desired.
- Sprinkle thin red onion slices all over.
- Add sun-dried tomato pieces all over pizza. If not making homemade sun-dried tomatoes, Bella Sun Luci is labeled gluten-free.
- Sprinkle a hefty dash of kosher salt and pepper all over pizza for flavor.
- Place pizza on a hot pizza stone in oven and bake for approximately 10-15 minutes, or until edges are golden brown.
- When finished, top with parmesan, basil leaves and arugula.
- Slice and serve.
- Note: Each pizza will have a different amount of toppings, so top to your desired amount.
- Remember to salt and pepper your pizza and add fresh parmesan for flavor, as gluten-free pizzas need lots of flavor!
